Looking for your next breakfast food that won’t break the bank, is easy to make, easy to store AND super healthy? Look no further: Introducing Eggins. Or at least that’s what we call them!
Let’s talk about what is in the base recipe first, because after that, you get to choose your own adventure (I’ll explain in a second). Preheat your oven to 350 degree F.
Every Eggin recipe uses this base (makes 12 Eggins):
10 eggs
1tsp Pepper
1tsp Salt
1tsp Garlic powder
2TBL milk

Whisk the ingredients and set aside.
Then the real fun begins……
Grab a muffin tin! Use paper cups if you would like and grab some fillings to go in. A few ideas are….
Onions!
Avocado
Cheese
Bacon
Sausage
Tomato
Bell pepper
Broccoli Sprouts
ANYTHING YOU WANT!
And just start building!
Have your kids join in! What would they like in their breakfast?
I usually make half with mushrooms and half without, as my husband isn’t a fan. That’s another great thing about this treat, you customize each eggin!
Place in the oven at 350 degree for around 15 minutes. Cook time varies on each oven, just keep an eye on them the first time you make the recipe.
After you take them out, let cool for 5 minutes. Don’t be alarmed if they flatten out a bit, that is perfectly normal.
Package your eggins in your favorite reusable container with a side of fruit and crackers. Toss into your fridge or lunch pail for a quick and easy breakfast treat on the go!
